Sushi Rolls with crispy Shrimp and Marinaded Tuna

I really love eating sushi as its appropriate for so many moments during the day.

Ingredients:

Adjust Servings
1x cup Sushi Rice
1/3 cup wine vinegar
1/2 tsp salt
20 medium sized shrimps
160g tuna fillet
1 avocado
30g fresh ginger
20g coriander
150ml soy sauce
30ml honey
20ml oyster sauce
4 sheets nori seaweed
Flour
Egg
Breadcrumbs
Wasabi Paste
Pickled Ginger
Salt
Black Pepper

Directions

1.
Rinse the sushi rice in cold water until the water running out is clear.

Place in a pan with 2 cups of cold water and a pinch of salt. Bring to the boil and reduce to a minimum heat for twelve minutes.

Remove from heat and leave in the pan with the lid on for five minutes. Now turn out onto a tray and season with the warm wine vinegar, and a little salt. Cover, but do not refrigerate.

Chop the ginger and coriander. Add the soy sauce, honey and oyster sauce.

Chop the tuna and dice into small 5mm squares.
Add to the soy sauce/oyster sauce/coriander/ginger mixture. Twenty minutes maximum.

Flour, egg and breadcrumb (pané) the shrimps. Fry the shrimps in the hot oil. Season with salt, pepper and lemon juice.

On a sheet of seaweed add a layer of rice on about half of the sheet, a few millimeters thick.

Add a line of fried shrimp and one quarter of the sliced avocado.

Roll as tight as possible.

Repeat for four rolls, slice and distribute amongst the marinaded tuna amongst the four rolls.

Decorate with the wasabi paste, a little extra soy sauce and the pickled ginger.
