Neat & Chaos Club Sandwich

Always loved the combination of flavours and textures in a good club sandwich. Again, the dilemma will be to make a classic dish, yet stamp our own identity upon it. Here, I think we’ve done that by the preparation of the chicken.

Ingredients:

1 double breast fresh chicken
8 rashers of bacons
4 hard boiled eggs (7 minutes from boiling)
8 Romaine lettuce leaves.
2 medium sized ripe tomatoes
4 spoonfuls of mayonnaise
100g butter
Salt, Black Pepper
100g fresh basil
100 ml olive oil
4 garlic cloves
1 recipe of Ciabatta Bread
300g all purpose flour
200 ml water
1 tsp salt
1 tsp dried yeast

Directions

1.
The day before. Slice chicken breasts horizontally, you can use the imperfect slices in the sandwich too. Liquidize the basil leaves, garlic and olive oil. And pour over the chicken slices. Refrigerate.

If you want to make your own ciabatta, then warm the water to blood temperature, and add the dried yeast.

Mix salt with flour. Add the water/yeast mixture. Mix thoroughly. Cover and leave at room temperature. This should be done about three hours before cooking. Every thirty minutes, stretch out the soft dough, roll back on itself. We’re introducing air into the dough. After the fourth time. Cut in rough four pieces, allow to double in size. Knock back and fold over and shape into rectangular shapes. Place on silpat sheet. Allow to double in size.

Heat oven, place a tray in the bottom. Place ciabatta in oven and add water to the tray beneath to create steam. Cook for approximately twenty minutes, turning over half way through.

Execution
Mix the hard-boiled eggs with the mayonnaise.

Cook the bacon.

Slice the tomatoes.

Cut ciabaCa in half lengthwise. Grill lightly.

Sauté the chicken slices in hot oil, then throw them onto the grill to take a little colouration. The whole cooking process will be short, obviously depends on thickness of chicken. But should be no more than two minutes

Spread the hard boiled egg mixture on the ciabatta.

Add the lettuce.

Add the top and slice for easier eating.

Notes
This sandwich is probably sufficient for an entire lunch meal, especially when we served it to friends recently with a handful of truffle parmesan fries. Surprisingly, some frozen Margaritas, accompanied by afternoon sun pouring into the garden and Best of Barbara Streisand went perfectly with the sandwich.
