Kind of tired by the commercial varieties of granola that seem to consist entirely of oats. You can add dried fruits during the cooking process but we find this tends to make the granola soft.

Ingredients:

Adjust Servings
2 cups nuts,pecans, walnuts, almonds, mixed to your desired specifications 1 cup Oats
1/2 cup shredded Coconut
3/4 cup honey
1/4 brown sugar
50g butter
Vanilla fresh/essence Pinch of salt

Directions

1.
Peel the almonds if using by throwing them into boiling water and immediately removing the water from the stove.
Mark as complete

Chop all the nuts into smaller pieces, we cut them lengthwise like lozenges.

Toast the nuts in the oven for fifteen minutes, turning once or twice

Heat the butter in a casserole large enough to eventually take all the nuts.

Add the sugar and allow to melt.
Mark as complete

Add the honey, pinch of salt and the vanilla essence.
Mark as complete
7.
Tip onto a tray lined with a Silpat mat and cook for twenty minutes, turning every five minutes
